Corn Pone Recipe


Growing up in Pennsylvania, I don’t recall any dinner that included cornbread. Only after I was stationed at Holloman Air Force Base in New Mexico and then later moved to Wichita Falls, Texas, did I have the opportunity to experience cornbread with the southern style of food.

The funny thing is that this recipe came from my grandmother. One day while talking to her on one of our weekly calls, I mentioned that I wanted to try to make some cornbread. She then told me that she had a recipe however she called it “corn pone”. A few days later, my grandmother sent me the recipe the old-fashioned way, in a letter via the US mail. This was a few years before Al Gore invented the internet.

Ingredients  

Dry Ingredients

  • 1 Cup Corn Meal
  • 1 Cup Flour
  • 4 tsp. Baking Powder
  • 1/2 tsp. Salt

All other ingredients

  • 1 Cup Honey
  • 2 tbsp. Butter
  • 1 Large Egg
  • 1 Cup Milk

Instructions 

  • Mix all dry ingredients together
  • Add all the other ingredients to the dry mixture.
  • Coat the inside of a pan with butter and apply flour to make a non stick surface.
  • Pour the batter into the coated pan.
  • Bake at 350 for 10-15 minutes or until golden brown.
