Cowboy Caviar is a bean salad/dip with southwestern flavors, ideal as a summer appetizer or side dish. It includes tomatoes, avocados, onions, beans, peas, corn, bell pepper, cilantro, and optional jalapeno. The dressing consists of sugar, salt, pepper, garlic powder, lime juice, vinegar, and olive oil. Mix and refrigerate before serving. Enjoy with tortilla chips or as a side dish.
